Well, the countdown continues! Five more days to my birthday. We decided not to have gifts for the adults this year, since money has been tight with rising gas prices, and we like to give to our kids. I'm going to cook my own birthday dinner, but don't fret. I love to cook and since it's my birthday this is the one day of the year that I can cook something and not worry about whether anyone else likes it! I'm thinking about eggplant parmigiana and strawberry whipped cream cake. My mommy always got me a strawberry whipped cream cake, and I haven't had one since she passed on 8 years ago. I decided that this year I'm bringing back that tradition!
